Sodium bicarbonate
Sodium bicarbonate, often called baking soda, serves as a key leavening agent in food. When heated or mixed with acids, it releases carbon dioxide, making dough or batter rise-creating light, fluffy textures in baked goods like bread, cookies, and cakes. It also plays a role in carbonated drinks. When reacting with acids in the beverage, it releases carbon dioxide, contributing to the effervescence that gives these drinks their bubbly texture.
Mechanism of action of sodium bicarbonate
