At room temperature, citric acid is white crystalline powder, odorless, extremely sour taste, density 1.542g/cm3, melting point 153-159ºC, decomposition above 175ºC release water and carbon dioxide. Citric acid is easily soluble in water, and its solubility is 59g at 20ºC. The pH of its 2% aqueous solution is 2.1. The crystal morphology of citric acid varies due to different crystallization conditions. It is slightly weathered in dry air and hygroscopic in humid air. It can be decomposed into a variety of products by heating and react with acids, bases and glycerin. Citric acid reacts with ethanol to form ethyl citrate.
